    The Jansz Premium NV Rosé is based upon Jansz wines of several vintages. Specially selected and crafted individual batches from cool climate locations in Tasmania, form this wine. Every site used to source grapes is specifically designated to growing fruit for sparkling wine. All batches are kept separate during winemaking to maximise blending options and the complexity of the final wines. The wine then goes through secondary fermentation in bottles and is aged on yeast lees for as long as possible with the average age of the final blend being 18 months to two years.

    Dassai 45 Nigori Junmai Daiginjo is a premium Japanese sake produced by the Asahi Shuzo Brewery, located in the Yamaguchi Prefecture of Japan. It is a unique variation of the Dassai 45 Junmai Daiginjo that incorporates the traditional Japanese brewing method of nigori, which involves leaving some of the rice sediment in the sake after it is pressed. Junmai refers to sake that is made purely from rice, water, yeast, and koji. Daiginjo is a classification of sake that indicates it is made from highly polished rice (at least 50% of the outer layer of the rice grain is removed) and fermented at low temperatures for an extended period of time. The sake is characterized by a rich and complex flavor profile, with a balanced sweetness and a smooth, clean finish. Honeysuckle and citrus scents are immediately apparent with slight aromas of nougat, roasted nuts and a sniff of strawberry from the Pinot Noir.     Tyrrell’s Wines Hunter Valley Semillon 2022

    Sourced from a small selection of our favourite Semillon blocks, the grapes were both hand and machine picked before gentle pressing and fermentation in stainless steel tanks. The wine then spent a few months on yeast lees to gain extra complexity and mouth feel.
  • Rotlay is a parcel of vines within the larger Sonnenuhr vineyard, vinified separately for this bottling thanks to the unusual beauty and complexity of its wines. The Sonnenuhr (‘sundial’) vineyard itself is one of the most celebrated in the Mosel, and this precipitously steep part of it yields a wonderful example of the vineyard’s style in this cool corner of the Mosel: light but intensely flavored. 2020 was a warm vintage (the last in a trio of warm years) but with cooler weather at harvest. This ensured freshness and balance in the wines, which are remarkably easy to drink while maintaining all the tension and elegance typical of Mosel Riesling. The Rotlay in 2020 showcases the cool, understated style of Heinrichshof’s wines: delicate hints of spice, flowers and slatey mineral seduce rather than overwhelm the drinker. Additional complexity of flavor may be expected when aged for 4-5 years after the vintage.
