Tatenokawa 18 Nakadori Junmai Daiginjo Sake uses rice polished down (semabuai) to 18% of the original grain size - the highest polishing ratio in the entirety of Japan. Furthermore, instead of blending the brewer only bottles the best portion of the pressed sake (called the nakadori) as it holds the best flavor. With magnificent aromatics and a complex, brilliant flavor, Tatenokawa 18 is the essence of luxury. A true gem.

Tatenokawa was the first Sake Brewery in Yamagata who decided to brew exclusively Junmai Daiginjo class sake, and hope to continue to do so while providing their high quality merchandise at an affordable price. Nearly all of the rice they use to brew is locally grown Miyama Nishiki and Dewasansan. In 2014, ANA International picked this sake for their First Class and Business Class sake. Using the locally grown Dewasansan sake rice and only native Yamagata Kobo, Tatenokawa achieves an elegant sake with surprising complexity and energy. Relatively high acidity with a grapefruit peel-like aroma and flavor. Just the right amount of sweetness offers balance and leads every sip into a refreshing finish.

No pressing by pressure. The elegant fragrance and fascination is created only from drops. Fukuro-tsuri (Drip-sake) is made from only drops by gravity from moromi (fermentation mush) in a hanged filter bag. It has an elegant fragrance and the dense, fascinating taste. Yuki No Bosha Junmai Daiginjo "Cabin in the Snow" Saiya Brewery doesn't allow high demand speed their production. The sake they brew follows a strict discipline to fine quality. The brewers do all they can to insure a healthy and clean environment and level of strong, consistent effort in brewing. The composition of their sake doesn’t take on a strong aroma (known as uwadatsuka), instead it has a strong aftertaste, or fukumi. This achievement takes studied time, brewing at low temperatures without exposure to air. The result allows for the aromas of the yeast to blend beautifully into their sake.
