Afuri Ohana Kimoto Junmai Ohanasake Namazume

Made with yeast derived from a rose flower. It looks cherry colored from the yeast but it smells like cherries too. It’s creamy and packed with umami from the cold lactic fermentation (Kimoto) and the super geeky Hyogo grown Aiyama rice only polished to 90%. Then the rose flower yeast adds a layer of refreshing acidity and a hint of sweetness. Afuri Ohana Kimoto Junmai Muroka Nama can be served chilled or room temperature, try it with grilled pork, seared steak or as you begin your afternoon.

Afuri Terra/Y Junmai Yamahai

90% polished rice balances double the typical amount of Koji with the lactic acid production of Yamahai. The 40% Koji (starch to rice converting mold) gives layers of pine nut brittle and roast chestnuts. The Yamahai lends earthy mushrooms and the highest grade Hyogo grown Yamadanishiki offers pineapple flavors often associated with Daiginjo. Earthy flavors suggested the name Terra/Y.

The most intense flavours of the Yamadanishiki rice have been drawn out to achieve a highly floral, delicate sake with a salty palate and a rich and aromatic minerality. Akashi-Tai Junmai Daiginjo Genshu Sake has  aromas of melon, lemon, bitter orange, sage and subtle herbaceous. On the palate it offers a perfect balance of lemon and bitter orange to offer a long-lasting finish.

Allegrini Palazzo della Torre Rosso Veronese 2020

Palazzo della Torre is one of the wines that has made Allegrini famous internationally, as it was the precursor of the double fermentation method: most of the grapes are vinified at harvest, while the remaining part is left to partially dry (appassimento). In January the wine is blended with the raisinated grapes, and a second fermentation begins. It then ages in second use French oak barriques for 15 months. A blend of Corvina Veronese, Corvinone, Rondinella and Sangiovese, this is an elegant, harmonious wine with considerable structure. Expect notes of vanilla, black pepper and cloves, with gentle nuances of raisined grapes. The palate is velvety, with soft tannins and a long and persistent finish.

Made with a blend of Touriga Franca, Tinta Roriz and Tinta Barroca.

Deep, crimson color. This Altano red reveals scented floral aromas and focused, fresh fruit. Simultaneously full and silky on the palate, well-defined red fruit flavours come to the fore, enveloped in soft, ripe tannins and spicy notes. Generous, well-structured and elegant.

Ready for immediate consumption, although the wine has the potential to continue developing favourably for up to 4 years.
