Created by Richard Geoffroy, former Chef de Cave at Dom Pérignon, IWA 5 redefines sake through the lens of Champagne artistry and Japanese precision. Each Assemblage is born in Toyama, Japan, where crystal-clear mountain waters and meticulous craftsmanship converge to create a sake of depth, elegance, and harmony.

From Assemblage 1, the foundation of the IWA philosophy, to Assemblage 5, the culmination of five years of evolution, each release blends Yamadanishiki, Omachi, and Gohyakumangoku rice with five distinct yeast strains, including select wine yeasts. The result: a pure Junmai Daiginjō polished to 35%, revealing seamless texture, refined aromatics, and balance across every sip.

The IWA 5 Reserves complete the experience, offering additional richness, depth, and age-worthy complexity. Together, they tell the story of a modern icon—where tradition meets innovation, and Japanese craft meets French vision.
