The Owner Behind the Collection

William has spent years studying, tasting, and teaching sake. What you find on our shelves is not a distributor list — it is a collection built by someone who knows the category deeply and buys accordingly.


What Sake Actually Is

Sake is a Japanese fermented rice beverage with over a thousand years of history. It is often called "rice wine" but the production process is actually closer to beer. Starch in the rice is first converted to sugar by a mold called koji, and then fermented by yeast into alcohol. This process, called multi-parallel fermentation, is unique to sake and is what gives it its flavor complexity.

The style is largely determined by how much the rice is polished before brewing. More polishing means a cleaner, more refined flavor. A Junmai Daiginjo is polished to at least 50% of its original size — delicate, aromatic, fruit-forward. A Junmai with less polishing is richer, earthier, and more food-friendly.

Other factors include water source, yeast strain, rice variety, and whether the sake is filtered, pasteurized, or served fresh. This is why the category needs range. One bottle does not represent sake any more than one bottle represents all of wine.

Nigori — Unfiltered, cloudy, slightly sweet and creamy. One of the most approachable styles and a good entry point for newcomers.

Rosé Sake — Made with red rice varieties. Visually striking and genuinely different in flavor from anything else in the sake world.
