Hagiwara Yamahai Junmai is a premium sake from Ibaraki, Japan, made by Hagiwara Shuzo with Omachi rice polished to 60%. Brewed using the traditional yamahai method, this Junmai sake shows aromas of steamed rice, apple, nectarine, citrus peel, yogurt, and light earth. The palate has medium body, firm acidity, clear umami, and a dry finish. Serve chilled, at room temperature, or gently warmed with grilled fish, yakitori, pork gyoza, mushrooms, ramen, or roasted chicken.
