Fukucho “Moon on the Water” Junmai Ginjo is produced by Imada Shuzo in Hiroshima Prefecture under the direction of owner and toji Miho Imada.
Created specifically for the U.S. market, this Junmai Ginjo is made with Yamada Nishiki sake rice from Hiroshima and Hyogo. It offers an expressive profile of melon, lime and ripe cantaloupe, followed by fennel, anise, white pepper and subtle spice. The palate combines fruit with a gentle savory character and a clean, mineral-driven finish.
What I particularly enjoy about Moon on the Water is the way it connects Hiroshima's tradition of Ginjo brewing with a sake that remains very approachable at the table. The fruit is noticeable without becoming sweet, while the spice and savory elements give it enough complexity to work with food.
Serving Temperature: Best served chilled, around 45–50°F, allowing it to warm gradually in the glass.
Food Pairing: Excellent with scallops, lobster, shrimp, crab, sushi and sashimi, grilled white fish, tempura, dumplings, mild cheeses, and dishes with citrus or subtle aromatic spice.
