Fattoria Moretto Lambrusco Grasparossa di Castelvetro Secco is a dry sparkling red made entirely from organically farmed Lambrusco Grasparossa on the hills surrounding Castelvetro di Modena.
Wild blackberry, mulberry and plum are joined by violet, fresh herbs and subtle savory notes. The palate is dry and energetic, with lively acidity, gentle tannins and a fine effervescence that keeps the dark fruit fresh through the finish.
Grasparossa naturally gives a deeper color and more tannic structure than many other Lambrusco varieties. Fattoria Moretto focuses entirely on this local grape, producing a style that is refreshing but also structured enough to work particularly well with food.
I like this wine because it shows how different serious Lambrusco can be from the sweeter commercial examples many people know. It is dry, savory and refreshing, with enough tannin and acidity to stand alongside some of Emilia-Romagna’s richest dishes.
Food Pairing: Pair with prosciutto, mortadella, salumi, Parmigiano-Reggiano, pizza, barbecue, sausages, burgers, or pasta with meat ragù.
Serve around 46–50°F.
