Domaine Vacheron Sancerre 2025 is a Sauvignon Blanc from one of the benchmark estates of Sancerre, produced from organically and biodynamically farmed vineyards across the appellation.

Lemon, green apple and white peach are joined by elderflower, fresh herbs and subtle white pepper. The palate is fresh and precise, with bright acidity, a lightly rounded texture and a distinctly mineral finish.

Fruit from both flinty and limestone-influenced soils gives the wine a combination of aromatic lift, freshness and stony character, while fermentation with indigenous yeasts and aging in tank keep the focus firmly on the Sauvignon Blanc and the terroir.

I like the 2025 because it has more depth than a simple, citrus-driven Sancerre. There is freshness and energy, but also enough texture and concentration to make the wine feel complete and particularly useful at the table.

Food Pairing: Pair with oysters, goat cheese, grilled fish, shellfish, sushi, asparagus, fresh salads, or roast chicken with herbs.

Serve around 46–50°F.
