Domaines Ott Château de Selle Côtes de Provence Rosé 2025 comes from the limestone hills of Château de Selle in Provence and is built around Grenache, supported by Cinsault, Mourvèdre and Syrah.
White peach, apricot and citrus are joined by delicate white flowers and subtle exotic fruit. The palate is dry and refined, with a silky texture, bright acidity and a mineral character that becomes more pronounced through the long, saline finish.
Grenache provides the wine’s balance and core of fruit, while Cinsault brings softness and Mourvèdre and Syrah add structure and depth. The result is a Provence rosé with considerably more texture and complexity than a simple aperitif style.
I like the way the 2025 combines generosity with precision. There is enough ripe summer fruit to make the wine immediately expressive, but the acidity, chalky minerality and touch of white pepper keep it fresh and defined through the finish.
Food Pairing: Pair with grilled fish, lobster, scallops, shrimp, crudo, Mediterranean vegetables, roast chicken, Niçoise salad, or soft cheeses.
Serve around 46–50°F.
