Domaine Jean-Marc & Hugues Pavelot Savigny-lès-Beaune Premier Cru Les Serpentières 2010 is a mature Pinot Noir from a tiny south-facing Premier Cru parcel in the Côte de Beaune.

After more than fifteen years in bottle, the wine has moved beyond its youthful cherry and blackberry character toward a more complex expression of dried red fruit, forest floor, dried herbs and subtle spice. Earthy and savory notes become increasingly prominent as the wine opens.

Les Serpentières is one of Pavelot’s more structured Savigny Premier Crus. The vineyard’s mature vines and marl-rich soils give the wine concentration and freshness, while bottle age has softened the tannins and brought greater harmony to the fruit and savory elements.

The 2010 vintage was particularly successful here, producing a wine praised at release for its concentration, elegance and long spicy finish. Today, it offers the character of mature Burgundy without the pricing associated with the Côte de Nuits.

Food Pairing: Pair with roast duck, veal, roast chicken, game birds, pork tenderloin, mushroom dishes, or aged Comté.

Serve around 58–61°F. Stand the bottle upright before opening to allow any sediment to settle. Open gently and taste before deciding whether to decant; a long decant is not recommended for a wine at this stage of maturity.
