Champagne Vilmart & Cie Grande Réserve Brut is a Premier Cru Champagne from Rilly-la-Montagne, made from Pinot Noir and Chardonnay.
Peach, apricot and pear are joined by golden apple, acacia, fresh citrus and butter biscuit. The palate is structured and energetic, with fine bubbles, lively acidity and a creamy texture leading to a long, persistent finish.
The current release combines 70% Pinot Noir and 30% Chardonnay. The wines are matured in large oak casks, while malolactic fermentation is avoided, preserving freshness and tension despite the richness of the fruit.
I like the balance here between Pinot Noir depth and Vilmart’s naturally fresh style. The oak adds texture rather than obvious wood flavors, while the acidity keeps the wine precise and particularly useful at the table.
Food Pairing: Pair with sushi, tuna tartare, poached or roasted chicken, grilled fish, creamy seafood dishes, mushroom preparations, Comté, or other aged cheeses.
Serve around 48–52°F.
