Champagne Leclerc Briant Abyss Rosé Extra Brut 2019 is a Chardonnay-dominant vintage rosé that completes part of its maturation beneath the Atlantic Ocean off the coast of Brittany.
After disgorgement, the bottles are submerged approximately 60 meters below the surface near the island of Ouessant, where they remain exposed to constant water pressure, darkness and the movement of the sea.
The 2019 opens with wild strawberry, raspberry and citrus, followed by rose, violet, subtle pastry notes and a distinctive iodine-like character. The palate is dry and structured, with fine bubbles, ripe red fruit and a pronounced saline quality that continues through the long finish.
The rosé expression of Abyss has more fruit and breadth than the white cuvée, but the defining maritime character remains very clear. Its combination of red fruit, chalky structure and salinity makes it particularly compelling at the table rather than simply as an aperitif Champagne.
Food Pairing: Pair with bluefin tuna, salmon sashimi, smoked salmon, lobster, scallops, langoustines, grilled prawns, duck breast, morels or other mushroom dishes.
Serve around 48–52°F in a tulip-shaped Champagne glass or white-wine glass to allow its texture and aromatics to develop.
