Champagne Leclerc Briant Abyss Brut Nature Millésime 2019 is one of the most distinctive wines produced by this biodynamic Champagne house, created specifically for extended maturation beneath the Atlantic Ocean.
After its initial aging in Champagne, the bottles are submerged approximately 60 meters below the surface off the island of Ouessant in Brittany, where they remain for close to a year under constant pressure, darkness and movement.
The 2019 opens with ripe apple and pear, followed by lemon, wet stone and subtle iodine notes. The palate combines the generous character of the vintage with precise acidity, fine bubbles and a pronounced saline, chalky finish.
There is no dosage, allowing the mineral and marine character to remain completely exposed. Despite this dryness, the natural richness of the 2019 vintage gives the wine enough breadth and texture to avoid austerity.
Abyss is less about conventional Champagne luxury and more about texture, minerality and the unusual influence of its underwater maturation. It is a fascinating bottle for Champagne collectors and for anyone interested in distinctive methods of élevage.
Food Pairing: Pair with oysters, caviar, scallops, lobster, grilled langoustines, sashimi, roasted turbot, or other refined seafood dishes.
Serve around 48–52°F in a white-wine or tulip-shaped Champagne glass rather than a narrow flute.
