Camille Giroud Chambertin Grand Cru 2018 comes from one of the most historic Grand Cru vineyards of the Côte de Nuits and offers a powerful yet refined expression of Pinot Noir.
Black cherry, raspberry and wild strawberry are joined by violet, rose petal, subtle spice, earthy notes and a touch of savory herbs. The palate is concentrated and structured, with fresh acidity, fine but persistent tannins and a long, layered finish.
Partial whole-cluster fermentation adds aromatic lift and additional texture, while measured use of new oak brings spice and depth without overwhelming the fruit or the character of the vineyard.
I like the balance of the 2018. There is real depth and concentration, but the wine still retains freshness, perfume and precision. It is beginning to enter its drinking window now, although the structure and balance suggest that it should continue to develop beautifully for many years.
Food Pairing: Pair with roast duck, beef tenderloin, venison, game birds, truffle dishes, mushroom preparations, or mature soft cheeses.
Serve around 58–62°F. If drinking now, decant carefully for approximately 45–60 minutes.
