Bodegas Cerrón La Servil 2023 comes from old, high-altitude vineyards in Jumilla, where Monastrell is joined by small proportions of traditional local grape varieties.
The wine shows fresh cherry and raspberry alongside dried flowers, Mediterranean herbs and subtle spice. The palate is energetic rather than heavy, with fine tannins, vibrant acidity and a pronounced stony, mineral character that continues through the finish.
La Servil offers a different perspective on Jumilla. Instead of emphasizing sheer ripeness and power, it highlights freshness, perfume and the tension that can come from old vines, altitude and sandy, limestone-influenced soils.
Its balance of red fruit, savory herbs and mineral structure makes it particularly versatile at the table.
Food Pairing: Pair with grilled lamb, pork, roasted meats, charcuterie, mushroom dishes, rice dishes, grilled sausages, or aged Manchego.
Serve around 58–62°F. A 30-minute decant can help the aromatic profile open.
