Arômes de Pavie Saint-Émilion Grand Cru 2016 is the second wine of Château Pavie, combining the estate’s characteristic richness with a more approachable expression of its Saint-Émilion terroir.

The wine is dominated by Merlot, with Cabernet Franc and Cabernet Sauvignon adding freshness, aromatic complexity and structure. Blackberry, black plum and cassis lead the profile, followed by violet, tobacco, truffle, cedar and subtle earthy notes. The palate is full and concentrated, with ripe dark fruit, polished tannins and a long, savory finish.

Aging in French oak adds spice and depth, while the excellent 2016 vintage gives the wine enough freshness and structure to remain balanced despite its generous style.

What I like about the 2016 Arômes de Pavie is that it offers much of the depth and personality associated with Château Pavie in a wine that is already showing beautifully. The tannins have softened with bottle age, while the dark fruit, tobacco and earthy complexity are beginning to integrate into a more mature and layered expression.

Food Pairing: Pair with beef tenderloin, braised short ribs, lamb chops, duck, mushroom dishes, truffle preparations, or aged hard cheeses.

Serve around 60–64°F. Decant for approximately 30–60 minutes before serving.
