Arnaud Baillot Volnay 2023 comes from two parcels in the village of Volnay and offers a refined expression of Pinot Noir from the Côte de Beaune.
Raspberry, red cherry and cranberry are joined by violet, subtle spice and a light earthy character. The palate is medium-bodied and precise, with fresh acidity, fine-grained tannins and a mineral finish that gives the wine both energy and length.
The use of partial whole-cluster fermentation adds aromatic lift and a little extra structure without taking attention away from the purity of the Pinot Noir. The result is a Volnay that combines delicate fruit with enough depth and tannin to develop further in bottle.
I like the balance here between elegance and structure. Volnay is often associated with finesse, and this 2023 certainly has that quality, but there is also good concentration and a savory mineral character that keeps the wine from feeling delicate or simple.
Food Pairing: Pair with roast duck, chicken, veal, pork tenderloin, mushroom risotto, grilled salmon, truffle dishes, or soft and semi-aged cheeses.
Serve around 58–62°F. If drinking young, give the wine approximately 30 minutes in a decanter.
