Noble Hill Simonskop Chenin Blanc 2025 comes from a single dry-farmed vineyard planted in 1987 on the granitic slopes of the Simonsberg in South Africa.

Quince, white peach and citrus zest are joined by white flowers, subtle herbal notes and a distinct wet-stone character. The palate is medium-bodied and textured, with fresh acidity, gentle lees-derived weight and a saline mineral finish.

The wine is naturally fermented in old barrels and clay amphorae, then matured for nine months on its fine lees. The combination of old vines, decomposed granite soils and very low yields gives the wine concentration without sacrificing freshness.

What I find especially interesting here is the balance between texture and precision. There is enough depth to make the wine feel serious, but the acidity and mineral character keep it energetic and very food-friendly.

Food Pairing: Pair with grilled halibut, scallops, crab, roast chicken, sushi, Thai dishes, roasted vegetables, or soft cheeses.

Serve around 48–52°F.
