Katsuyama Den Junmai Daiginjo is produced by Katsuyama Shuzo in Miyagi Prefecture, a brewery with roots dating back to 1688 and a long association with the historic Date family of Sendai.
Made from Yamada Nishiki rice polished to 35%, Den is produced using the delicate fukuro-shibori method, where the sake is collected gently from hanging fermentation bags rather than through conventional pressing.
The aroma is elegant but expressive, with ripe melon, pear and white peach followed by subtle floral notes. The palate has a richer personality than many highly polished Junmai Daiginjo, combining gentle sweetness with precise acidity and a deep, clean umami that carries through a long finish.
Den is particularly interesting because it brings together refinement and strength. The 35% polishing gives clarity and finesse, while the natural character of Yamada Nishiki provides enough weight and umami to pair with dishes that would overpower a more delicate Daiginjo.
Serving Temperature: Serve chilled around 41–50°F in a large wine glass. Allow a few minutes in the glass for the aroma and texture to develop.
Food Pairing: Pair with toro or chutoro, salmon sashimi, sukiyaki, yakiniku, roast duck, grilled beef, wagyu, mushrooms, cured ham, or aged cheeses.
An absolutely wonderful sake!
