Born Muroka Nama Genshu Junmai Daiginjo is brewed by Kato Kichibee Shoten in Fukui Prefecture from Yamada Nishiki rice polished to 50%.

The name tells much of the story. Muroka means the sake has not undergone charcoal filtration, nama means it is unpasteurized, and genshu means it has not been diluted with water after brewing. Together, these techniques create a Junmai Daiginjo with considerably more intensity and texture than a conventional polished style.

Ripe pear and stone fruit are joined by floral notes, subtle spice and a savory rice character. The palate is full and silky, with concentrated fruit, noticeable umami and the freshness expected from nama sake.

Despite its Junmai Daiginjo classification, this is not about delicacy. Its appeal lies in the combination of aromatic refinement with the richer body and intensity of a genshu. That makes it particularly interesting for customers who already enjoy premium sake and want to explore a more powerful expression.

Serving Temperature: Serve well chilled, around 40–45°F. Keep refrigerated before and after opening.

Food Pairing: Pair with lobster, fatty tuna, smoked salmon, pork belly, foie gras, butter-based seafood dishes, creamy cheeses, grilled meats, or moderately spicy cuisine.
