Born Gold Junmai Daiginjo is brewed by Kato Kichibee Shoten in Fukui Prefecture from Yamada Nishiki, one of Japan’s most highly regarded sake rice varieties.
Born Gold is made in a muroka style, meaning it is not charcoal-filtered after brewing. The sake is then matured at very low temperature for approximately one year, allowing its fruit and texture to become more integrated before release.
Aromas of apple, pear and ripe peach are joined by a subtle citrus note and a gentle savory rice character. The palate is smooth and rounded, with generous fruit, a soft texture and enough freshness to keep the sake balanced.
