Antinori Cervaro della Sala 2024 is one of Italy’s benchmark white wines, produced at Castello della Sala in Umbria from Chardonnay with a small proportion of Grechetto.
The 2024 combines ripe citrus and floral character with pink grapefruit, chamomile and elderflower, followed by layers of toasted almond, subtle vanilla, pastry and a distinctive flinty note. On the palate, there is both concentration and freshness, with a savory mineral character, notes of white pepper and ginger, and a long, structured finish.
What makes Cervaro particularly compelling is the balance between the richness of barrel-fermented Chardonnay and the freshness brought by Grechetto. It is a white wine that is rewarding now but also has the structure and acidity to develop further with bottle age.
Serve lightly chilled and allow it a few minutes in the glass to open.
