Shichiken Yama no Kasumi Sparkling Sake is produced by Yamanashi Meijo at the foot of Mt. Kaikoma in Yamanashi Prefecture, where exceptionally pure mountain water plays an important role in the brewery’s style.
Yama no Kasumi means “mountain mist,” a reference to the delicate haze created by fine rice sediment suspended in the sake. Secondary fermentation takes place in the bottle, producing persistent, fine bubbles and a texture that sits somewhere between sparkling sake and a lightly creamy nigori.
Aromas of pear, pineapple and green apple are joined by subtle lactic notes and a gentle malty character. The palate is lively and finely sparkling, with refreshing sweetness balanced by acidity, salinity and umami through the finish.
What makes Yama no Kasumi especially interesting is the contrast between its soft, cloudy texture and its freshness. It is not simply a sweet sparkling sake; there is enough acidity, salinity and savory character to make it very effective at the table.
Serving Temperature: Serve well chilled, around 40–45°F, ideally in a Champagne flute or white-wine glass.
Food Pairing: Pair with oysters, grilled prawns, tuna ceviche, sushi, caprese salad, fried seafood, soft cheeses, dishes with butter-based sauces, or strawberry daifuku.
