Dassai 39 Junmai Daiginjo is produced by DASSAI in Yamaguchi Prefecture using Yamada Nishiki, Japan’s most highly regarded sake rice, polished to 39% of its original size.
The aroma is elegant and expressive, with ripe pear, white peach, melon and subtle tropical fruit. The palate is smooth and gently creamy, combining clean fruit with a delicate sweetness, balanced acidity and a precise, lingering finish.
Dassai 39 sits beautifully between the richer accessibility of Dassai 45 and the greater refinement of Dassai 23. The 39% polishing ratio gives the sake purity and finesse while preserving enough texture and fruit to make it particularly enjoyable at the table.
Serving Temperature: Serve chilled around 42–50°F in a wine glass or medium-sized sake glass.
Food Pairing: Pair with sushi, sashimi, oysters, scallops, lobster, grilled white fish, lightly seasoned poultry, tempura, or delicate vegetable dishes.
