Fukucho Seaside Junmai Sparkling Sake is produced by Imada Shuzo in Hiroshima Prefecture under the direction of brewery owner and toji Miho Imada.

Made as a Junmai sparkling sake with secondary fermentation in bottle, Seaside also incorporates white koji, bringing a bright citrus character and refreshing acidity to the style.

Aromas of lemon, lime and green apple lead into a lively palate with fine, soft bubbles and a fresh citrus-driven finish. At 13% alcohol, it has enough structure to work at the table while remaining particularly refreshing when served well chilled.

What I enjoy most about Seaside is that it does not try to imitate sparkling wine. It maintains a clear sake identity, while the white koji, acidity and bottle fermentation give it a completely different expression.

Serving Temperature: Serve well chilled, around 40–45°F.

Food Pairing: Excellent with oysters, shrimp, crab, ceviche, sushi, sashimi, tempura, spicy shellfish, grilled fish, tomato-based dishes, and fruit-based desserts.
