Takijiman Junmai Hayase is a dry Junmai sake from Mie, Japan, made by Takijiman Shuzo with Yamada Nishiki and Gohyakumangoku rice polished to 60%. Also known as Karakuchi Ittetsu Hayase, this sake shows aromas of steamed rice, green apple, melon rind, citrus, and fresh herbs.
