Noguchi Honjozo Muroka Nama Genshu is produced by the Noguchi Naohiko Sake Institute in Ishikawa, founded to preserve and pass on the brewing knowledge of legendary Toji Naohiko Noguchi.
Made from Gohyakumangoku rice polished to 60%, this is an unusual expression of Honjozo. It is muroka, meaning it is not charcoal-filtered; nama, meaning it is unpasteurized; and genshu, meaning it is bottled without dilution.
Pear, ripe white peach and muscat are joined by banana, grain and a subtle caramel note. The palate is rich and concentrated, yet the texture remains surprisingly smooth and refined. Mineral character and fresh acidity balance the sweetness and umami, leading into a clean, persistent finish.
What makes this sake especially interesting is the contrast between its Honjozo classification and its intensity. Rather than being light and simple, the combination of nama, muroka and genshu gives it considerable depth and energy.
Serving Temperature: Serve chilled around 45–50°F for freshness and aromatic definition. It can also be enjoyed around room temperature or gently warmed to approximately 108°F, where the umami and savory character become more pronounced.
Food Pairing: Pair with sashimi, dashi-based dishes, grilled fish, yakitori, pork belly, mushrooms, ramen, roasted poultry, or aged cheeses.
NOTE: This sake is unpasteurized (nama) and should be kept under refrigeration. 305 Wines can ship unpasteurized sake, however it is at the customer's discretion. When completing a purchase of unpasteurized sake from 305 Wines, you are giving us your authorization to ship unpasteurized sake to you.
