Born Muroka Nama Genshu Junmai Daiginjo is a premium sake from Fukui, Japan, made by Kato Kichibee Shoten with Yamada Nishiki rice polished to 50%. Bottled as muroka, nama, and genshu, this sake shows aromas of rose, cooked banana, melon, tropical fruit, steamed rice, and light savory notes. The palate has full body, clear fruit, layered umami, higher alcohol, and a clean finish. Serve well chilled with sashimi, grilled fish, avocado salad, tofu, cheese, or butter-based seafood dishes.
