Yoi-no-Tsuki Midnight Moon Daiginjo is a premium sake from Iwate, Japan, made by Tsukinowa Shuzo with local Ginginga rice polished to 50%. Brewed in the Nanbu tradition, this Daiginjo shows aromas of raspberry, melon, peach, steamed rice, dried flowers, and mineral notes. The palate has soft fruit, mild sweetness, light umami, and a dry finish. Serve chilled with sushi, sashimi, uni, shellfish, smoked fish, green salads, soft cheeses, or caviar.
