Champagne Nicolas Feuillatte Palmes d'Or Brut 2008 is the house’s prestige cuvée, produced from equal parts Chardonnay and Pinot Noir and released after extended aging.

Golden apple, dried citrus and apricot are joined by brioche, almond, hazelnut and subtle spice. The palate is rich and creamy, with fine bubbles, layered fruit and a distinct mineral and saline character that keeps the wine balanced through a long, persistent finish.

The combination of Chardonnay and Pinot Noir works particularly well in the structured 2008 vintage. Chardonnay brings freshness and citrus-driven precision, while Pinot Noir contributes depth, texture and red-fruit character.

I like the way this Champagne has developed with age. The fruit remains present, but tertiary notes of toast, nuts and spice are becoming more expressive, giving the wine greater complexity without losing freshness.

Food Pairing: Pair with lobster, scallops, roast chicken, turbot, mushroom dishes, foie gras, aged Comté, or other mature hard cheeses.

Serve around 50–54°F. Allow the wine a few minutes in the glass rather than serving it excessively cold.
