Champagne Le Brun Servenay Odalie Extra Brut is a grower Champagne from Avize, blending Chardonnay with Pinot Noir and Pinot Meunier to combine the freshness of the Côte des Blancs with greater fruit and texture.
Apple, pear and citrus are joined by white flowers, brioche, light honey and subtle dried-fruit notes. The palate is fresh and energetic, with fine bubbles, bright acidity and enough texture to give the wine presence through a clean, mineral finish.
The wine is produced without malolactic fermentation, helping preserve its natural acidity and tension, while extended aging on the lees adds the brioche and pastry notes associated with traditional-method Champagne.
I like the balance here between freshness and generosity. Chardonnay keeps the wine focused and precise, while Pinot Noir and Pinot Meunier bring a little more roundness and fruit, making Odalie approachable enough as an aperitif but also very useful at the table.
Food Pairing: Pair with oysters, shrimp, crab, sushi, fried seafood, white fish, roast chicken, charcuterie, or soft cheeses.
Serve around 46–50°F.
