From the PlumpJack family of wines, 2019 Adaptation is a bold expression of Napa Valley Cabernet Sauvignon. Grapes are sourced from vineyards in Oak Knoll, Yountville, and Pope Valley, this Cabernet, reflecting the complexity of Napa’s terroirs. The warm 2019 vintage produced concentrated fruit, structured tannins, and impressive depth. Aged for 18 months in 50% new French oak, the wine offers a balance of richness and elegance.

In the glass, blackberry, cassis, and ripe plum dominate, layered with dark chocolate, espresso, and a touch of baking spice. The palate is structured yet smooth, with fine tannins supporting a long, velvety finish. This is a Cabernet was made for immediate enjoyment, but it will evolve over the next decade.

Perfect for pairing with grilled ribeye, or truffle-infused dishes, its depth and complexity also make it a great match for aged cheeses like Manchego or Parmigiano-Reggiano.
