Tatenokawa 18 Junmai Daiginjo is a limited-production premium sake from Yamagata, Japan, made by Tatenokawa Shuzo with Yamada Nishiki rice polished to 18%. Bottled from the nakadori, the middle portion of the pressing, this Junmai Daiginjo shows aromas of pear, lychee, pineapple, white flowers, and steamed rice. The palate has soft fruit, mild rice sweetness, light umami, and a clean finish. Serve chilled with sashimi, scallops, oysters, carpaccio, soft cheeses, or lightly seasoned white fish.
