Amabuki Gin no Kurenai is a naturally rosé-colored sake from Amabuki Shuzo in Saga Prefecture, made with ancient black rice and the brewery’s signature flower yeasts.
Its color comes entirely from the rice rather than from added fruit or coloring. Aromas of raspberry, cassis and red cherry are joined by subtle floral and herbal notes. The palate is silky and lightly sweet at first, followed by bright acidity, gentle grain character and a refreshing, slightly dry finish.
What makes Gin no Kurenai especially interesting is the contrast between its appearance and its structure. It looks playful, but the acidity and subtle astringency give it enough definition to work very well at the table.
Serving Temperature: Serve chilled around 41–50°F. A wine glass or Champagne glass works particularly well and shows both the color and aromatics.
Food Pairing: Pair with tuna tartare, salmon, shrimp, charcuterie, soft cheeses, lightly spicy dishes, fruit-based appetizers, or dishes incorporating berries or citrus.
It also works beautifully as an aperitif.
