Dassai 39 Junmai Daiginjo
Made in Yamaguchi with Yamada Nishiki rice polished to 39%, Dassai 39 shows pear, white peach, melon, pineapple and floral notes alongside gentle rice sweetness and a clean finish.
Serve: Chilled, approximately 46–54°F, preferably in a white wine or tulip-shaped glass.
Pair with: Nigiri, sashimi, oysters, scallops, lobster, grilled white fish or simply prepared poultry.
Hakutsuru Nishiki Junmai Daiginjo
Produced in Hyogo using Hakutsuru's proprietary Hakutsuru Nishiki sake rice. Aromas of jasmine, orange blossom, pear, melon, vanilla and steamed rice lead to a textured palate with mild sweetness, clear umami and a persistent clean finish.
Serve: Chilled, approximately 46–54°F.
Pair with: Sashimi, oysters, scallops, grilled fish, roast chicken or lightly seasoned pork.
IWA 5 Reserves
Created at Shiraiwa in Toyama, IWA 5 Reserves is built entirely from matured components ranging from approximately two to seven years of age. The blend combines Yamada Nishiki, Omachi and Gohyakumangoku rice and offers notes of white flowers, pear, plum, herbs, brioche, pastry cream, cocoa, toasted grains and white pepper.
Unlike most Junmai Daiginjo, IWA 5 Reserves rewards experimentation with temperature.
Serve: Around 54°F in a large Champagne glass, around 59–60°F in a Burgundy-style glass, or gently warmed to approximately 99°F.
Pair with: Roasted poultry, duck, mushrooms, truffles, grilled fish, richer seafood dishes, aged cheeses or umami-driven Japanese cuisine.
