Hakkaisan Snow Aged 3 Years Junmai Daiginjo Yukimuro
Aged for three years in a traditional snow room in Niigata, this sake combines pear, melon, green apple, citrus and fresh rice with mild umami and a dry finish. The slow, cold maturation adds another layer to its character without masking its freshness.
Serve: Chilled around 50–54°F or closer to room temperature.
Pair with: Sashimi, tempura, Mediterranean seafood, washed-rind cheeses or dry-aged beef.
Kirin-Zan Junmai Daiginjo
A Niigata Junmai Daiginjo made with locally grown rice polished to 45%. Expect pear, green apple, melon, steamed rice and floral notes with balanced acidity, gentle umami and a dry finish.
Serve: Chilled, approximately 46–54°F.
Pair with: Oysters, scallops, sashimi, grilled white fish, tempura or poultry.
Dassai 45 Junmai Daiginjo
One of Japan's most recognized introductions to Junmai Daiginjo, made exclusively with Yamada Nishiki rice. Pear, melon and white peach lead into soft rice sweetness, mild umami and a clean finish.
Serve: Chilled, approximately 46–54°F.
Pair with: Sushi, sashimi, lobster, scallops, oysters or grilled seafood.
