Noguchi Miyamanishiki Yamahai Muroka Nama Genshu is produced by the Noguchi Naohiko Sake Institute in Ishikawa, founded to preserve and pass on the extraordinary brewing knowledge of legendary Toji Naohiko Noguchi.
Made with Miyamanishiki rice polished to 55%, this is a powerful expression of the Yamahai method. It is muroka, meaning it is not charcoal-filtered; nama, meaning it is unpasteurized; and genshu, meaning it is bottled without dilution.
Aromas of nectarine, citrus and dried flowers are joined by honey, fresh herbs and subtle spice. The palate is concentrated yet surprisingly precise, with pronounced umami, fresh acidity and a mineral character balancing its 19% alcohol. Gentle bitterness and astringency add structure and lead into a long, clean, savory finish.
This is not a delicate, highly perfumed style of Ginjo. Its personality comes from the combination of Miyamanishiki, Yamahai fermentation and the intensity of nama genshu, producing a sake with depth, energy and remarkable complexity.
Serving Temperature: Serve chilled around 45–50°F to emphasize freshness and precision. Allowing it to warm slightly in the glass will reveal more umami, spice and texture.
Food Pairing: Pair with grilled fish, fatty tuna, yakitori, pork belly, roasted poultry, mushrooms, miso-based dishes, aged cheeses, or rich izakaya cuisine.
NOTE: This sake is unpasteurized (nama) and should be kept under refrigeration. 305 Wines can ship unpasteurized sake, however it is at the customer's discretion. When completing a purchase of unpasteurized sake from 305 Wines, you are giving us your authorization to ship unpasteurized sake to you.
