Charles Heidsieck Millésimé Brut La Collection Crayères 1995 is a rare library release from the house’s historic chalk cellars, disgorged only in 2021 after decades of maturation.
Made from Pinot Noir and Chardonnay, the wine has developed remarkable complexity while retaining an unexpected sense of freshness. Dried yellow fruit, clementine and candied citrus are joined by roasted coffee, cocoa, gentle smoke and warm spice.
The palate is broad and layered, with a creamy texture, very fine bubbles and the depth that comes only from extended aging. Despite its maturity, the wine remains energetic, with acidity and a distinct saline character giving definition to the long finish.
What makes this bottle particularly compelling is the combination of age and freshness. The extended time in the Crayères has added tertiary complexity without taking away the structure or vitality of the wine.
This is a Champagne for collectors, but also an extraordinary opportunity to experience how a great vintage evolves when kept under ideal cellar conditions for decades before disgorgement.
Food Pairing: Pair with lobster, turbot, roast poultry, foie gras, aged Comté, mushroom dishes, truffle preparations, or dishes incorporating toasted nuts and gentle spice.
Serve around 50–54°F in a white-wine or tulip-shaped Champagne glass.
