The palate is medium to full-bodied and concentrated, with firm but refined tannins, fresh acidity and a long mineral finish.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe wine is fully destemmed and fermented with native yeasts before aging primarily in used barrels, with only a small proportion of new oak.
