    The vines on the appellation Chablis spread over 12 hectares, situated at the heart of the Chablisian vineyard. This wine is aged in stainless steel tanks so as to respect the typicity of the appellation. Our Chablis are characterized by their freshness, power and tenacity. Their bouquet displays a dominance of mineral notes, which are often associated with delicate touches of citrus fruit (lemon and grapefruit).
     
  • Bernard Defaix Chablis Premier Cru Cote de Lechet 2020 is flinty minerality on the nose, tense and streamlined on the palate, with greengage fruit carrying the finish.
    The Côte de Lechet is the principal holding of the Defaix family; they own 8ha (18 acres) of this Premier Cru. Near Vaillons, on the Left Bank of the Serein, this area of premiers crus is known for its high-toned, airy style, with abundant minerality. 2020 is an excellent vintage of balanced ripeness, and the Côte de Lechet 2020 already shows a thrilling flinty mineral intensity and tension that will delight Chablis lovers
  • Natural Wines are those that have the minimum posible intervention of man.Sulfites are not added. Natural yeasts are used and the wine is bottled unfiltered. Fermentation in tanks. When the natural sugars in the wine have a value of 23 grams per liter, it is bottled and the final sparkling wine is left with 9 grams of sugar. The wine continue to ferment inside the bottle up to the indicated pressure. The sugar in sparkling wine and it ́s pressure are obtained naturally. The lees remain in contact with the wine, which is expressed in its turbidity. Selected native yeasts. Pet – Nat.

    Champagne Laurent-Perrier Blanc de Blancs Brut Nature is made with 100% of Chardonnay grapes. Chardonnay from the Côte des Blancs (Avize, Cramant, Oiry, Chouilly) and from the Montagne de Reims (Tours-sur-Marne, Villers-Marmery, Rilly La Montagne).  The wine has s a white gold color with a fine sparkle. On the nose it displays minerality and hints of citrus. On the palate the wine is balanced and sustained with a finish that is fresh with notes of lemon.

    Champagne Louis Roederer Blanc de Blancs 2015 has a bright yellow hue with slightly green tints and bubbles that are soft, creamy, fine and delicate. The bouquet is precise and mineral with notes of ripe citrus fruit and white, almost vanilla-like blossoms (pollen) and notes of freshly harvested wheat and almonds. The freshness of the bouquet comes through in the form of minty and iodised aromas (sea spray) which slowly evolve towards warmer notes of smoke, hot butter and toast. The palate is creamy and soft yet concentrated on entry. The wine, underpinned by the delicate bubbles, unfolds majestically. It offers us the sensation of ripe, concentrated juice carried by an incredibly powdery texture with a distinctly saline finish. Oaky and smoky notes continue to draw out the wine, giving it extra length and concentration, an indication of its exceptional cellar-ageing potential. The finish is pure, refreshing and mouthwatering.

Its grapes are coming from Le Mesnil and the other half from Montgueux, the best cru of the Aube. On the nose the wine has notes of pastry lightly toasted evolves into floral and delicate iris and lime-tree.     Alain Chavy produces restrained, structured, and long-lived white Burgundies from 17 acres of vineyards in Puligny-Montrachet, with small holdings in the neighboring villages of Chassagne and Meursault. Alain established Domaine Alain Chavy in 2003 with vineyards inherited from his father and includes some of Puligny's top premier crus. Domaine Alain Chavy Puligny-Montrachet 2020 has notes of green apple and lemon and tend to be tauter and firmer on the palate compared to wines from neighboring villages. Aging in a small percentage of new French oak barrels lends accents of toast and vanilla. Structured white wines with high acid and grip, Puligny-Montrachet is destined for long aging.
