"La Bernardine" is the name of the house, sitting in the middle of the vineyards, which was bought by Michel’s grandfather. M. Chapoutier La Bernardine Blanc Chateauneuf-du-Pape 2021 has golden, yellow and brilliant in color with notes of vine blossom and lily in the nose.  The palate well-balance and fresh with flavors of candied citrus.

Afuri Ohana Kimoto Junmai Ohanasake Namazume

Made with yeast derived from a rose flower. It looks cherry colored from the yeast but it smells like cherries too. It’s creamy and packed with umami from the cold lactic fermentation (Kimoto) and the super geeky Hyogo grown Aiyama rice only polished to 90%. Then the rose flower yeast adds a layer of refreshing acidity and a hint of sweetness. Afuri Ohana Kimoto Junmai Muroka Nama can be served chilled or room temperature, try it with grilled pork, seared steak or as you begin your afternoon.

90% polished rice balances double the typical amount of Koji with the lactic acid production of Yamahai. The 40% Koji (starch to rice converting mold) gives layers of pine nut brittle and roast chestnuts. The Yamahai lends earthy mushrooms and the highest grade Hyogo grown Yamadanishiki offers pineapple flavors often associated with Daiginjo. Earthy flavors suggested the name Terra/Y.

On the nose it has refined and complex fruit aromas like pear, peach, apricot, plum, floral, honeysuckle, slightly spicy with a touch of citrus and refreshed by a minty note. Founded in 1849, the Tajima Brewery is managed by the 6th generation of the family. The brewery specializes in the production of yamahai sake. The traditional yamahai method of brewing sake takes 3 times longer than modern methods, but it gives the sake an exceptionally layered and complex flavor. The Tajima family named their sake Fuku Chitose to express their wish that their sake will always bring happiness to those who drink it. Fuku means “happiness” while chitose means “forever”.

Ronchi Di Cialla Schioppettino Di Cialla 2017

For centuries, the Schioppettino grapes were cultivated in Friulli-Venezia Giulia, in Italy. In the middle of the 19th century, with the advent of phylloxera, Schioppettino was almost completely destroyed. In 1970, Paolo and Dina Rapuzzi founded the winery Ronchi di Cialla and managed to find about 60 surviving vines of Schioppettino. They made new cuttings and managed, in the space of 2 years, to create a first wine estate of 3,500 vines that marked the rebirth of the Schioppettino. In the words of Nick Jackson MW: "Schioppettino is a paradoxical variety: intensely aromatic, medium-bodied, with a mere 12-12.5% alcohol, high acidity and a lingering, perfumed finish, it is also, in spite of its lightness, capable of very long aging." The 2017 vintage is made with 100% Schioppettino grapes, aged in French oak barriques for 14-18 months and in bottles for 30-36 months. According to the producer the wine has capacity to age and develop in the next 20-23 years. So buy 2 bottles: one to drink now and another one for aging! Ronchi Di Cialla Schioppettino Di Cialla 2017 has a balanced ruby red color with bright reflections. It has aromas of  white pepper and small red fruits, currants and blackberries, intriguing balsamic and undergrowth (sous-bois) notes.

Bernard Defaix Chablis 1er Cru Cote de Lechet 2022

The Côte de Lechet is the principal holding of the Defaix family; they own 8ha (18 acres) of this Premier Cru. Near Vaillons, on the Left Bank of the Serein, this area of premiers crus is known for its high-toned, airy style, with abundant chalky minerality. 2022 is an excellent, balanced vintage, ripe but dry and mineral. This style could be the (excellent!) future for Chablis in the climate change era.
